Paleo Chocolate Banana Muffins

Paleo, wait, what?! Nope, I am not going Paleo. After failing miserably at the Whole30 (I ended up eating chocolate for breakfast as an act of defiance – at least I didn’t gulp down vodka first thing) – I decided to have my own paleo-rules in my life. Try to take away my beloved chocolate quark, prosecco, or oats from me and we have a serious issue. Believe me, you don’t want to be around me when I don’t get to eat and drink my favorite stuff.

I didn’t mention chocolate, cause naturally, life without chocolate is not bearable.

I made these muffins full paleo, cause I wanted to bring them to the CrossFit box and to my office where as my boss is not allowed to consume big amounts of sugar. Wait, the baking powder is not paleo I guess. Get over it.

MuffinsOf course you can adapt them to non-paleo or just freaking enjoy them without being on any specific ‘diet’ (oh how much I hate this damn word).

Simply said, these are dairy-free, glutenfree and sugar free. They don’t contain protein powder, but wholesome, tasty, organic flours. They have the blissful flavors of chocolate and banana. An old combo, but a good one, nonetheless.

The bonus here is, that after making these, your kitchen will smell from chocolate and banana for days. Not too bad in my opinion. Now, amazingly enough I am sitting here, writing this post instead of being dead from salmonella poisoning or something. Considering the scary copious amounts of raw cacao-banana-egg-flour mixture I ate while baking, I definitely should be. At least I smothered it every damn where in my kitchen and on myself, so it was clear, Lucie is baking. We know that already.

Errrr…where was I? Right, I intended to give you the recipe. Eat this (Guess what song this is??) :

Paleo Chocolate Banana Muffins (10 muffins)

Ingredients:

40g coconut flour

60g almond flour

4 heaped tbsp raw cacao

1 tsp maca powder (for your hormones, Babes. You want it :-) )

1/2 package baking powder

3 tsp cinnamon

1/2 tsp salt

Sweetener of your choice (optional) – depends on your sweet tooth. The bananas are already pretty sweet. But you can add maple syrup or honey or stevia if you want.

3 ripe bananas

2 eggs

4 eggwhites

3 heaped tbsp of coconut oil

Preparation:

Preheat oven to 180°C.

Mix dry ingredients in a big bowl.

Blend eggs, bananas, eggwhites and coconut oil in a separate bowl.

Mix wet ingredients with dry ingredients.

Grease muffin pan with coconut oil spray and fill in the mixture.

Bake for 15 minutes at 180°C.

Do you eat raw dough or baking mixture? I wouldn’t have a problem to eat ONLY raw muffins. My ignorance of the possible consequences is probably not very healthy.
