Don’t worry. I am not going to post ONLY Paleo recipes in the future. But sometimes I will. Ok with that? Well, I will do it anyway. Seriously – Paleo YES, but not ALL the time. Agreed? Tks.
I wasn’t even intending to post a recipe at all, but after the major kitchen fail on Saturday, I HAD to have a success. And these are by no means a fail.
I did get the idea for this recipe from somewhere on the Internet – and of course totally forgot where. So if someone recognizes parts of her/his recipe here – credit goes to you.
I delivered these on Sunday to the CrossFit Box and the very first approvement was measured by means of Ramon, the boss himself together with his Mom. I’d say the issuing of this blessing is a sign of success.
Even better – I made another batch on Monday, which turned out even BETTER . One of the girl-coaches was the lucky one who got to try them still WARM with a spoonful of homemade almond butter on top which I brought along as well. Not that I tried this combo at home or anything (*cough*, about 6547367438 times, *coughcough*). With raw cookies, half-baked cookies (c’mon, I had to test if they need to bake a little longer or not), right-out-of-the-oven cookies and cooled down cookies. I might have felt a little sick by the end of the day.

Top with homemade Almond Butter or Healthy Nutella Spread
My favorite part of these cookies are the soft consistency on the inside. I swear, if you warm it up a few seconds in the microwave before you eat it, you will die and go to food heaven. Minus the dying part, cause we don’t want that. But we want to be in Food Heaven, right? Or Cookie Heaven. With Nutbutter Clouds.
Paleo Chocolate Chip Cookies (25-30 cookies)
Ingredients:
30 pitted dates
3 eggs
3 eggwhites
3 heaped tbsp coconut oil
2 tsp ground vanilla
1 tsp salt
50g almond flour
50g coconut flour
1/2 package (8g) baking powder
120g Chocolate Chips
Preparation:
Preheat oven to 180°C.
Place dates, eggs and eggwhites in a bowl.
Mix with a Hand Blender or Food Processor (don’t laugh. My phase of dolefulness cause of the loss of Ninja is still going strong)
Stir in Vanilla, Flours and Salt.
Fold in Chocolate Chips.
Spoon on a parchement paper and bake for 15-20 minutes.
The baking time depends on the size of the cookies. The smaller, the shorter. Mine were huge (naturally), so I baked them for at least 15 minutes.
Just make sure they stay soft!
