Good morning! Welcome to Monday’s party!
There is absolutely NOTHING I can tell you from my weekend rather than me being in a flu coma for 84 hours. I am not joking, I was shut out from real life from Thursday night through to Sunday night with a horrible flu. I spare you with details. I looked like shit during all this time too, obviously. Sorry to show it, but I am of the opinion that a real blog consists of real pictures as well.
Momma was a little worried (read: to death) – I am hardly ever sick and the one in the family who is always healthy, fit and loud. Seeing me laying there not speaking a word but trembling and sneezing made her wanting to call the emergency.
What I dislike the most when being under the weather is cancelling my plans. We all know by now my level of activity is fairly high and of course I had plans for this weekend – which all failed. I am the last person to cancel appointments, so this is feels very uncomfortable for me, but I didn’t have the slightest chance. Only the thought of getting dressed or sitting in a restaurant made all my organs and brain turn. So I was confined to bed as if I had to protect money under my mattress (I wish), slept 50% of the time and watched movie after movie.
Despite my delirium and being filled up to the brim with 24 different chemicals, I invented two recipes!! One of them I share with you today, cause what else could I write. They actually turned out fabulous. What can I say? Mental clarity is overrated. While baking, I was clearly having my head resting on the table more than I care to admit. And hey – when I come to think of it, I didn’t even taste test cookie dough. This is the clearest sign of me being sick, no doubt about that.
BUT, here you go.
These cookies are gluten-free and almost paleo :-) The dark chocolate obviously is not paleo. I love the big chocolate chunks in them – I am the person who hates ‘Chocolate Chip Cookies’ in which you find ONE tiny crumb of burned chocolate. I know this guy does too, he actually drummed the idea into my head of the giant chunks here. I added WHOLE nuts – because I was lazy and cause it tastes fantastic. Win.
The chestnut flour gives them an amazing nutty/fall-y/rich flavor and paired with bananas and chocolate, I guess this goes into the group #strangebutgood.
CHESTNUT CHOCOLATE CHUNK COOKIES
100g chestnut flour
200g almond flour
3 eggs
180g bananas
1 tsp ground vanilla
2 tbsp stevia powder
1 tsp baking powder
350g dark chocolate broken in chunks
200g mixed whole nuts
Preparation:
Preheat oven to 200°C.
Mix flours, vanilla, baking powder and stevia.
Add in bananas and eggs, puree with the hand blender until well combined and creamy.
Stir in nuts and chocolate chunks.
Form cookies on a baking sheet with a big tablespoon.
Bake for 15-20 minutes.
